Fred’s uses 100% real mozzarella cheese, not block cheese. We use part-skim mozzarella produced to tight specifications for moisture, fat and salt content. The cheese is optimized to provide that stretch, texture and taste your patrons are looking for. Our classic mozzarella has a higher fat content for a creamier, more buttery cheese.
