Butter is hand rolled, by 3rd generation butter makers in Bonduel, WI (started making butter in 1926).

Cream comes from a variety of local Wisconsin creameries.

Butter is taken out of churn by hand, rolled in parchment, weighed, and labeled. It is not heavily manipulated. It tastes "just-churned". Over manipulation/mechanization changes the butterfat structure and can make other butters taste greasy or cloying.

Our hand rolled butter has a just-churned texture that is dense and full-flavored. Your mouth can tell the difference.

Many of our customers slice our butter roll into medallions and leave what they think they'll use during the week on the counter in a covered dish. Our butter holds its shape nicely at room temperature.  

Our hand rolled butter is a great “ingredient” butter.— Added to any sauce in cold pieces, it makes sauces/gravies thicker and silkier.— Great component to bake with—makes super flakey pastries and rich cookies/bars/confections.— Can be made into compound butter (with fresh herbs, garlic and melted onto meat or veggies).

Shelf Life = 150 days (end user can freeze it). One customer at the market said she brings it home, pre-slices it, freezes the medallions, and takes one out each week.

The natural flavoring you see listed in the ingredients of our unsalted hand rolled butter is lactic acid, a natural dairy product. Unless salt is added butter can begin to go rancid rather quickly so our butter maker uses lactic acid to help us maintain freshness in our unsalted butter.
